The only place I've ever actually wanted to order kale.
Pretty much ever person who'd been to Byron Bay told me I had to go to Bay Leaf Cafe. The joint cafe and coffee bar has a huge selection of hearty dishes, ranging from classics like scrambled eggs on toast to more unique dishes like the kale breakfast plate.
The coffee bar is covered with gorgeous hand made ceramic coffee cups (Available for sale!) and the coffee is delicious (it is Australia). There's almost always a line outside the brunch place, and because it closes at 2 pm it's quite hard to get a seat.
If you manage to get up early enough or patiently sunbathe while you wait, you won't regret it. The place is busy and lively, the menu is diverse and long, and the quality of the food is excellent. Everything tastes extremely fresh and despite the long waits, the staff never rush you.
If you're in the market for local product served to perfection, Bay Leaf is your spot.
