Street Vendors on crack.
Nothing embodies the hustle and bustle of Hong Kong better than the ladies markets (and those surrounding it). The heart of Hong Kong's south island is packed to the brim with vendors selling everything from kids t-shirts to Gucci knock-offs.

If you're located in Central, I'd recommend taking the subway to Prince Edward and making your way back to the coast where you can take the ferry home.
Although the Ladies market is closer to the Mong Kok station, Prince Edward leaves you right next to the flower market, which was my favourite.
The flower market is a street decked out in dozens of flower stalls; whether you want cacti, peonies, or a potted plant, someone's got you covered.
When Hong Kong is humid and sticky, it's nice to smell the flowers instead of the normal city smells (to put it nicely).

Wander towards the Ladies, Sneaker, Bird, and other markets, which are complete madness. It's one of those things you have to do: you need to haggle down the price of something you don't really need in the midst of hundreds of other hagglers shouting at each other. Enjoyable? Unclear. Necessary? Yes.
