Small menu and no alterations - could there be anything more Italian?

Vacanza Pizzeria is a cute spot in one of my favourite neighbourhoods in Sydney, Surrey Hills. While it is small, they have plenty of outdoor seating, so you bask in the sun as you stuff your face with pizza.
One of my favourite things about Vacanza is that they do not do alterations to their pizzas. While others would be turned off by how strict Vacanza is, I think it speaks to how serious they are about their pizza. These people are real pizza geeks and don't want you screwing up their amazing pizza with misguided additions. And after tasting Vacanza's pizza, I have no qualms about the no alterations rule.
The menu at the Vacanza Bronte location is much larger, but the Surrey Hills location makes up for its short menu with its location. It's just around the corner from Gelato Messina and has a lot of great food options nearby in case it's full (ex. Bills and Dimitri's). They also have your classics like margharita and diavola, and their own specials like the Il Capitano.
One of the best Neopolitan pizza's I've had in Sydney.
